I plan to gift an Apple Watch to my Girlfriend on her birthday. She is a fitness freak, and I wonder whether I should install any premium Fitness App on that Apple Watch.

I do not think that is necessary. Ask your girlfriend whether she has any special thoughts in her mind. Most fitness needs are covered by the default.
